No Bake Cherry Cheesecake Cookie Lasagna

The best desserts when the temperatures are hot mean that you don’t have to use your oven. This No Bake Cherry Cheesecake Cookie Lasagna is one of those no bake desserts that will be a hit during the summer months.

In fact, every time I make this no bake cherry cheesecake dessert, it’s gone in a flash. I’m sure it’d be just as delicious the next day, and if I ever have leftovers, I’ll be sure to report back and tell you!

The first time that I made this, I couldn’t get over all the delicious layers. It’s such a fun twist, and I wondered where it’d been my entire life. Now that I have the craving for this no bake cheesecake filling, I know that I’ll be making and sharing this with others my whole life.

This super dessert is perfect any time of the year, but this no-bake cherry cheesecake is excellent for family gatherings and summer barbecues.

Shopping List

  • Cherry Pie Filling
  • Cream cheese
  • Powdered sugar
  • White sugar
  • Cream (35% Milk Fat)
  • Pure vanilla extract
  • Pure Cherry Jam
  • Cool Whip
  • Oreo Cookie Crumbs
  • Mini Oreo Cookies (box of 6 packets)
  • Dark Chocolate Bar (for chocolate shavings)

How to make the best No Bake Cherry Cheesecake Lasagna Recipe

A quick reminder to lightly cooking spray a 9 X 13 baking dish or pan so that this perfect dessert recipe doesn’t stick.

Step 1: Make the cookie crust

Melt the butter and add it to the Oreo cookie crumbs, and mix well with a fork

Press the cookie crumb mixture into the baking dish and spread evenly. This is the base of your lasagna. Put this in the refrigerator while you make the cheesecake mixture

Step 2: Make the cheesecake filling

Beat cream cheese on medium-high speed until light and fluffy.

Add the dry ingredients: powdered sugar and white sugar. Mix into cream cheese, with mixer on low.

Fold in heavy cream and vanilla extract. Beat on medium speed until whipping cream is fully mixed into cream cheese

Add cherry jam and mix into the batter.

Add cool whip and beat on medium speed until mixture is well combined. Divide in half

Step 3: Make the cheesecake layers

Cover the cookie crumb base with a layer of the cream cheese batter and spread evenly.

Step 4: Add toppings

Sprinkle 3 packets of mini Oreo cookies over the cheesecake layer.

Spoon one can of cherry pie filling over the mini Oreos and cream cheese.

Repeat this once more, finishing with two cans of cherry pie filling for the top

Step 5: Chill in the fridge

Leave the lasagna in the refrigerator for about 2 hours before serving.   Store in an air-tight container and keep refrigerated. Best served cold.

TIPS

  • Any chocolate wafer cookie will do for the crust. Or you could substitute vanilla Oreos.
  • Even though this is a delicious summer dessert, it’s a fabulous Christmas dessert as well!
  • You can also choose to use fresh cherries for this easy treat or any type of seasonal fruit. Turning this into no-bake strawberry cheesecakes sounds like a fun idea as well! It’s an interesting food, so make it interesting!

FAQS

Can I make a soft graham cracker crust?

You bet! Just mix a little bit of melted butter and combine graham cracker crumbs and press down firmly in the pan!

Can I use a cup of cherry preserves on top?

You can top this with anything that you’d like! Anything cherry or strawberry or blueberry is going to taste divine on top of the whipped cream layer.

Can I freeze this no bake dessert?

I think that it’s best served fresh, but if you want to add it to the freezer, cover it and store it! It would give it a creamy texture for sure – and be cool and refreshing.

WHAT TO SERVE WITH THIS BEST DESSERT LASAGNA

I recommend serving the remaining cool whip and letting people add more on top!

You can also have topping ideas for this wonderful dessert lasagna like chocolate chips or fine crumbs of your favorite cookies! There are so many options for cookie crumbs!
