One of my favorite easy recipes to make, cake mix cookie recipes are often on the menu in our home. I love to make them with my granddaughter!

Whatโ€™s the best brownie mix?

We love fudge brownie mixes like Betty Crocker Dark Chocolate and Ghirardelli’s Dark Chocolate. Both are amazing and a great foundation for a gooey cookie.

Boxed mixes are great when you donโ€™t have a long time to spend in the kitchen. And the quality is so amazing these days, just like a homemade brownie!

Ingredients you will need

  • brownie mix (use a fudge brownie mix like Ghirardelli’s, Betty Crocker, or your fave!)
  • cream cheese
  • butter (melted and unsalted)
  • egg
  • semi-sweet chocolate chips
  • white chocolate chips or peanut butter chips

How to make the best Brownie Mix Cookies

Step One: Pre-heat oven to 350ยฐF/180C

Step Two: Line a large cookie sheet with parchment paper and set it aside.

Step Three: Using a large bowl and a hand mixer,  mix cream cheese and melted butter until smooth

 Step Four: Add the egg to the cream cheese mixture and continue mixing on medium speed until blended

Step Five: Add in brownie mix and mix on low speed until the brownie batter looks like a thick dough ball.

Step Six: Add the semi-sweet and (peanut butter) white chocolate chips.

Step Seven: The batter will look just like chocolate chip cookie dough.

Step Eight: Scoop the cookie dough with a large spoon or large cookie scoop, onto the lined cookie sheet.

Step Nine: Bake for 10-12 minutes until you see the crispy edge.

Step Ten: Let the cookies cool on the cookie sheet for five minutes then transfer to a wire rack to cool.

Step Eleven: Store in an airtight container or freeze for up to three months.

Variations of this recipe:

Swap out the chocolate chips for M&Mโ€™s, add peanuts or different flavors of chips. Just make sure to keep the total measurement to two cups.

Tips for making awesome fudgy brownie cookies

  • Sift the brownie mix before you use it. Why? Well it actually adds air to the mix, and well you can read more about that in my Cake Mix Recipesโ€ฆ
  • Make sure the butter and  eggs are room temperature.
  • Use the best chocolate chips or peanut butter chips you can find
  • Measure out the chocolate chips into a small bowl so that they are ready (Note: I always have a small and medium bowl on hand for measuring out ingredients!)
  • Bake only until the cookies are crisp around the edges.

How to store your Brownie Cookies

Use an airtight container, plastic box, or even a zippered freezer bag. If you want lots of cookies, double the recipe and freeze half for later.

Ingredients
  

  • 1 Box Brownie Mix
  • 4 oz cream cheese
  • 1/2 cup unsalted butter
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup peanut butter chips
  • 1 large egg

Instructions
 

  • Pre-heat oven to 350ยฐF/180C
  • Line a large baking sheet with parchment paper and place it close by
  • Using a large bowl of a stand mixer,ย  mix cream cheese and butter until smooth
  • Add the egg and continue mixing on medium speed until blended
  • Set electric mixer speed to low andย  add in brownie mix until it looks like a thickย  dough.ย 
  • Add the semi-sweet and white chocolate chips.
  • Scoop the cookie dough with a large spoon or cookie scoop, onto the lined cookie sheet.
  • Bake for 10-12 minutes until edges are set.*See note below.
  • Let the cookies cool on the cookie sheet for five minutes then transfer to a wire rack to cool.
  • Store in an airtight container or freeze for up to three months.
