Brownie Mix Cookies With Cream Cheese

When you’re craving a fudgy cookie that tastes like cream cheesecake brownies!

One of my favorite easy recipes to make, cake mix cookie recipes are often on the menu in our home. I love to make them with my granddaughter!

What’s the best brownie mix?

We love fudge brownie mixes like Betty Crocker Dark Chocolate and Ghirardelli’s Dark Chocolate. Both are amazing and a great foundation for a gooey cookie.

Why use a brownie box mix?

Boxed mixes are great when you don’t have a long time to spend in the kitchen. And the quality is so amazing these days, just like a homemade brownie! 

And if you are looking for peanut butter brownie cookies, keep reading! We got great ideas for variations of this great recipe. 

Ingredients you will need

  • brownie mix (use a fudge brownie mix like Ghirardelli’s, Betty Crocker, or your fave!)
  • cream cheese
  • butter (melted and unsalted)
  • egg
  • semi-sweet chocolate chips
  • white chocolate chips or peanut butter chips

How to make the best Brownie Mix Cookies

Step One: Pre-heat oven to 350°F/180C

Step Two: Line a large cookie sheet with parchment paper and set it aside.

Step Three: Using a large bowl and a hand mixer,  mix cream cheese and melted butter until smooth

 Step Four: Add the egg to the cream cheese mixture and continue mixing on medium speed until blended

Step Five: Add in brownie mix and mix on low speed until the brownie batter looks like a thick dough ball.

Step Six: Add the semi-sweet and (peanut butter) white chocolate chips.

Step Seven: The batter will look just like chocolate chip cookie dough.

Step Eight: Scoop the cookie dough with a large spoon or large cookie scoop, onto the lined cookie sheet.

Step Nine: Bake for 10-12 minutes until you see the crispy edge.

Step Ten: Let the cookies cool on the cookie sheet for five minutes then transfer to a wire rack to cool.

Step Eleven: Store in an airtight container or freeze for up to three months.

Variations of this recipe:

Swap out the chocolate chips for M&M’s, add peanuts or different flavors of chips. Just make sure to keep the total measurement to two cups.

Tips for making awesome fudgy brownie cookies

  • Sift the brownie mix before you use it. Why? Well it actually adds air to the mix, and well you can read more about that in my Cake Mix Recipes…
  • Make sure the butter and  eggs are room temperature.
  • Use the best chocolate chips or peanut butter chips you can find
  • Measure out the chocolate chips into a small bowl so that they are ready (Note: I always have a small and medium bowl on hand for measuring out ingredients!)
  • Bake only until the cookies are crisp around the edges.

The options are virtually endless. Want peanut butter and chocolate? Add peanut butter chips or chopped-up peanut butter cups. Like mint chocolate? Maybe some peppermint extract and mint chocolate chips or buttons.

Absolutely! You can make the fudgiest brownie cookies ever. But don’t stop there! Betty Crocker Brownie Mix is rich and chocolate-y too.

How to store your Brownie Cookies

Use an airtight container, plastic box, or even a zippered freezer bag. If you want lots of cookies, double the recipe and freeze half for later.

Brownie Mix Cookies with Cream Cheese

Ingredients

  • 1 Box Brownie Mix
  • 4 oz cream cheese
  • 1/2 cup unsalted butter
  • 1 1/2 cups semi-sweet chocolate chips
  • 1/2 cup peanut butter chips

Instructions

  1. Pre-heat oven to 350°F/180C
  2. Line a large baking sheet with parchment paper and place it close by
  3. Using a large bowl of a stand mixer,  mix cream cheese and butter until smooth
  4. Add the egg and continue mixing on medium speed until blended
  5. Set electric mixer speed to low and  add in brownie mix until it looks like a thick  dough. 
  6. Add the semi-sweet and white chocolate chips.
  7. Scoop the cookie dough with a large spoon or cookie scoop, onto the lined cookie sheet.
  8. Bake for 10-12 minutes until edges are set.*See note below.
  9. Let the cookies cool on the cookie sheet for five minutes then transfer to a wire rack to cool.
  10. Store in an airtight container or freeze for up to three months.

Notes

Be sure to check the baking times with your own oven. Bake for 10 minutes and then add time if necessary.
