How To Make Easy Chocolate Banana Bread
Detailed instructions are listed in the recipe card below. But here are the highlights.
For the banana bread
- Preheat the oven and spray a loaf pan with non-stick cooking spray.
- In a large mixing bowl, whisk together the dry ingredients; flour, unsweetened cocoa powder, baking soda, and baking powder; set aside.
- In a medium mixing bowl, beat together the butter and sugars with an electric mixer or hand mixer on medium speed until light and fluffy. Add the eggs and mashed bananas and mix until combined.
- Pour the wet mixture into the dry and stir to combine. Fold in the chocolate chips.
- Pour batter into the prepared loaf pan and spread out evenly.
- Bake the bread until a toothpick inserted into the center comes out clean. Set aside to cool in the pan on a wire rack.
To make the frosting
- In a medium skillet, heat the heavy cream and brown sugar over medium heat, stirring often until the sugar is dissolved and the mixture begins to lightly bubble. Stir in the butter and vanilla extract until the butter is melted.
- Remove the saucepan from the heat. Add the chocolate chips and whisk until melted and the frosting is smooth.
- Pour the frosting into a small bowl to cool for 10-15 minutes.
- Remove the bread from the loaf pan and drizzle the frosting over top. Slice the bread and serve.
Variations
If you are looking to switch things up a bit here are a few things you can do:
- Change up the type of chocolate chips and use different kinds of chocolate like dark, milk, or a different flavor chip altogether like peanut butter or butterscotch chips. Chocolate chunks work well too or chop your favorite candy bar into bite-sized pieces and throw it into the batter.
- Make a gluten free loaf and substitute with a 1-1 gluten free flour.
- Add some crunch and throw in toasted walnuts or pecans.
- Use mini loaf pans and make mini chocolate banana breads or use a muffin tray and turn the recipe into muffins.
Tips & Tricks For Making Chocolate Chip Banana Bread
- Make sure your bananas are very ripe, overripe bananas are the best as they are sweet. You don’t want to see any green on the banana peel. If there is still green, the bananas won’t be sweet enough. The best thing to ensure you always have ripe bananas on hand is to freeze your ripe bananas, peeled, when they being to turn black instead of throwing them away.
- Take the butter and eggs out of the fridge as soon as you start to prepare this recipe. Room temperature butter is easier to work with and it’s always best to bake with room temperature eggs.
- Stir in a touch of ground cinnamon to add some warmth to the chocolate banana bread. Or add some espresso powder as it complements the flavors well.
- Don’t be tempted to overmix the batter as this leads to a tough texture. Mix just until everything is combined.
- Feel free to leave off the chocolate frosting and make double chocolate banana bread, it will still taste great.
How to Store
Leftover banana bread can be covered with plastic wrap, aluminum foil or transferred to an airtight container. You can leave it on the kitchen counter for 3-4 days but if it’s hot and humid where you are, you may want to put it in the fridge.
You can also store the loaf in the freezer for up to 3 months. I sometimes like to pre-slice the banana bread into individual slices, flash-freeze the slices on a cookie sheet, and then transfer them to a container or plastic bag. This makes it easier to grab a slice when the mood hits though the banana bread may dry out faster this way. To pre-slice depends on how quickly you think you’ll be eating the leftovers.
FAQs
Can bananas be too ripe for banana bread?
As long as the bananas aren’t bruised inside they should be good to use. Make sure they haven’t started to go bad and grow mold.
How can you tell if your banana bread is done baking?
The toothpick test is the best way. Stick a toothpick into the middle of the loaf and if it comes out clean, your banana bread is ready to be removed from the oven.
