How to make the best bakery style banana chocolate chip muffins

Step 1: Preheat

Preheat the oven to 400 degrees.

Step 2: Grease the muffin pan

Spray or line 1 jumbo muffin pan and place it close to your baking workspace.

Step 3: Mix the ingredients in a bowl

In a large mixing bowl mix together the sugar, vegetable oil, melted butter, eggs, and vanilla. Add the mashed banana and mix just until combined. Use a whisk to mix it all up. I personally like chunks of bananas in my muffins, but if you donโ€™t, mix until smooth.

Recipe FAQs

What is the secret to making moist muffins?

A number of factors, but these are the most important:

  • Donโ€™t over stir
  • Use both butter and oil
  • Donโ€™t bake longer than 20 minutes

How do you get high domed muffins?

Use a jumbo or giant muffin tin and bake at a higher heat than usual.

Set your oven for 425F/220 C. Once the oven is ready, wait for fifteen (15) minutes before putting your muffins in to bake. Bake at this high heat for five (5) minutes and then reduce the heat to 400F/200C and bake for the remainder of the time in the recipe.

  1. These look great, but Iโ€™m concerned about the volume of bananas. How much are you expecting in weight or cups From five bananas?
