Every time we host a BBQ, I always end up thinking the same thing: Why donโt we do this more often?
I think we sometimes make entertaining harder in our heads than it needs to be. We worry about the time, the food, the cleanup, and whether everything will be โenough.โ
But a good backyard BBQ does not need to be fancy.
You need a simple menu, a little planning, something cold to drink, a few make-ahead recipes, and people you enjoy spending time with. Thatโs really it.
Before you get too far into the planning, start with a few simple questions:
- Where will everyone sit?
- What time should guests arrive?
- Will you provide all the food, or will guests bring something?
- Are you serving a full meal or keeping it casual?
- Do you want a campfire, sโmores, or dessert outside?
For a smaller gathering, I like planning for about 8 to 10 hungry people. That gives you enough food to feel generous without turning the whole weekend into one long kitchen project.
And if your group is larger, a potluck works beautifully. You can provide the main dish and ask guests to bring salads, sides, drinks, or desserts.

A little timeline makes the whole day feel easier. You donโt need a clipboard and a whistle โ just a simple plan so youโre not trying to do everything at once.
The Day Before
Choose your recipes, shop for groceries, make dessert if possible, and wash or gather your serving dishes.
This is also a good time to check your propane, charcoal, serving utensils, napkins, paper plates, ice, and drinks.
Morning Of
Make the coleslaw, prep any salads, chill drinks, set out serving pieces, and make sure desserts are ready.
If youโre using the slow cooker, get your pulled pork started early so it has plenty of time to cook.
One Hour Before Guests Arrive
Set up outdoor seating, add fairy lights or lanterns, put drinks on ice, and move salads or desserts to easy-to-grab spots.
If youโre using outdoor lights, this is the time to check that everything works before it gets dark.
Right Before Guests Arrive
Start the grill, put out appetizers, pour yourself something cold, and take a minute to relax.
I usually like inviting guests to arrive mid to late afternoon, around 3 oโclock, and then serving dinner around 5. That gives everyone time to visit, have a drink, enjoy a few appetizers, and settle in before the main meal.
And donโt be afraid to let people help. Some guests love having a little job. Shucking corn, slicing tomatoes, putting drinks in the cooler, setting out napkins โ all of that counts.

What to Serve at a Long Weekend BBQ
The best BBQ menu is one that lets you enjoy your own party.
I recommend keeping the food simple and familiar. A mixed grill is always a good option because it gives your guests variety without adding too much extra work.
You could serve:

- Creamy coleslaw
- Chips and dip
- A simple make-ahead dessert
If you have vegetarian guests, plan ahead so they feel looked after. Veggie burgers are an easy choice, but some guests may not want them cooked directly on the same grill surface as meat.
A grilling mat can help with this. It gives you a separate cooking surface and makes cleanup easier too.
For appetizers, Iโd keep it to one or two simple things. Chips and salsa, a veggie tray, hummus, or tzatziki dip are all easy choices.
You want people to nibble a little, not fill up before the main meal.

Pulled pork is one of my favorite make-ahead BBQ recipes because the slow cooker does most of the work.
There are lots of cuts you can use for pulled pork. Some recipes call for pork butt, some use pork shoulder, and some even use pork tenderloin.
I like pork shoulder because itโs easy to find, usually a good price, and it fits nicely in an average slow cooker. A 4 to 5 pound pork shoulder is a good size for feeding a small crowd.
Once the pork is cooked and shredded, you can mix it with your favorite BBQ sauce and serve it on soft buns with coleslaw on the side โ or right on top if thatโs how your family likes it.

A good BBQ sauce makes pulled pork even better.
At our house, that means a homemade hickory smoke BBQ sauce. It has that rich, smoky flavor that works beautifully with pulled pork, burgers, chicken, and anything else you want to brush on the grill.

My Mom used to say the secret to the best coleslaw was adding enough onion.
