I love baking with cake mix when I want something quick and dependable, and Duncan Hines lemon cake mix is a good one to keep in the pantry. You can use it for all kinds of easy desserts, but this lemon brownie recipe is the one I come back to when I want something simple, pretty, and full of lemon flavor.

Easy Ways to Use Duncan Hines Lemon Cake Mix
Tips for making lemon brownies from cake mix recipe…
- Sift the cake mix into a large mixing bowl. Honestly it takes very little time and will give you a ‘bakery style’ quality to any cake mix recipe.
- Make sure the large eggs are at room temperature
- Use a hand mixer to make sure the batter is blended well. If you have a stand mixer, go ahead and use that. I just prefer a smaller electric mixer.
- Bake in the center of the oven starting at the lowest time shown.

You will need the following ingredients

- Duncan Hines Lemon Cake Mix or Duncan Hines Lemon Supreme Cake Mix
- 2 large eggs
- ⅓ cup vegetable oil
- Lemon zest or lemon extract (I prefer lemon zest because of the natural flavor, but either is fine)
Glaze
- 1 cup powdered sugar
- 2 or 3 tbsp fresh lemon juice. Start with 2 first, and if the glaze is too thick add a little more. We don’t want the glaze to be too runny.

The Best Lemon Brownies (Easy Cake Mix Recipe)

Ingredients
- Duncan Hines Lemon Cake Mix
- 2 eggs - room temperature
- ⅓ cup vegetable oil
- Lemon zest or lemon extract - I prefer lemon zest, but either is fine
- Glaze
- 1 cup powdered sugar
- 2 tbsp lemon juice – fresh squeezed to get the glaze to the right consistency
Instructions
- Preheat the oven to 350F/175C and prepare a 8 x 8 baking pan by spraying it with non stick spray and then lining with parchment paper.
- In a large bowl combine cake mix, eggs, lemon zest and oil together and blend well with a hand mixer on low speed, gradually increasing to medium speed, until the batter is well mixed.
- Pour the lemon batter into the prepared baking pan, making sure it is spread evenly with a rubber spatula.
- Bake for 18 to 25 minutes – starting with 20 minutes and if the top of the brownies are starting to crack it is close to being done.
- You don’t want to overbake. The brownies should be a bit chewy and gooey in the center, and not raw. Complicated? Not at all.
- Cool the brownies on a wire rack until completely cooled.
- While the brownies are cooling, mix up the lemon glaze and then apply to the top of the brownies.
- Then using the sides of the parchment paper, lift them out of the pan, and cut into individual lemon bars. You should get 12 bars with this recipe.

I just made this during our wintery weather. I’m a big fan of all things lemon and while I didn’t have lemon cake mix, I did have yellow cake mix. Good news is that it works. I just added a little more lemon extract, zest, and some lemon juice to the batter. It came out very lemony, and not too much so. I can see why she says not to use the jello or it would be too cakey. These are a little chewy, but more like a light airy lemon bar. I haven’t made the icing yet, but I could see this cut into small squares for an event take along. I like them, the taste is nice, but I still think a regular lemon bar beats this for flavor. This no doubt beats a lemon bar by simplicity.
Can I use instant lemon pudding in yellow cake mix to make these brownies?
Hi Adrienne, using lemon pudding is ok, but your brownies will have a more cake like texture and not a chewy texture – like you get in this recipe. I always tell folks to try it!
How much lemon extract?
Hi Susan. Lemon extract can be pretty strong so I would just add 1/4 teaspoon to start.

These are delicious and so simple! I’m more of a cook than a baker but I will make these often. And what I love is that you could use any flavor cake mix to change it up! Obviously substituting different extracts to compliment the flavor.

These are delicious. I used zest and fresh lemon juice in the brownie mix and love the extra flavor. I also flip the brownies over, remove the parchment and glaze so that the presentation is prettier!
I have yet to try the recipe for lemon brownies, but they sound wonderful. I notice in your description before the actual recipe you say you use an 8 X 8 inch pan, but in the text of the recipe, it says 9 X 13 pan. Which size is correct? Thanks.

In your best lemon brownies you don’t put in the amount of lemon zest that is supposed to be used in the recipe or lemon extract. How much should it be?
