And the best part is that they will keep in an airtight container for the week, so breakfast meal prepping is solved.

Just wrap one up in plastic wrap to take on the go. Much easier than sitting down to a bowl of oatmeal, these healthy oatmeal bars can be enjoyed at home too, with the whole family.

Now these yummy baked oatmeal bars aren’t just for breakfast. They are one of my favorite ways to get a perfect pick-me-up at snack time.

I added the pistachios and dried cranberries, but you can add your own flavor combinations. Are you a big chocolate chip fan? Feel free to add ¼ cup mini dark chocolate chips.

  • Unsalted butter
  • Brown sugar
  • Coffee Cake packaged mix – Cinnamon Swirl or a Cinnamon type coffee cake mix
  • Orange juice
  • Egg at room temperature
  • Pure vanilla
  • Old fashioned oats
  • Chopped pistachios
  • Dried cranberries

Glaze:

  • Confectioner’s sugar
  • Cream

How to make the best baked oatmeal bar

You’ll love the ease of these baked breakfast bars! A fast and simple recipe to fuel your body for the day.

Step One: Preheat the oven

Preheat the oven to 350F/200C. Spray your 13 X 9 baking pan with cooking spray.

Step Two: Mix ingredients

In a large bowl mix the butter and brown sugar with an electric mixer until creamy and well blended.
Add the coffee cake mix and the cinnamon mix (2 separate packages), the orange juice, egg, and vanilla. Mix just until well blended.

Step Three: Add nuts and fruit

Stir in the pistachios and dried cranberries, just until they are mixed through.

Step Four: Spread the batter

Spread the batter evenly in the baking pan and bake for 30 to 35 minutes. The oatmeal bars will be done when they are golden brown on top and you can insert a wooden pick in the center and it comes out clean.

Step Five: Make the glaze

While the bars are cooling, mix the confectioner’s sugar and heavy cream together. For fun, you can spoon the glaze into a plastic sandwich bag, cut out a corner, and pipe it across the cooled breakfast bars.
