Baked Oatmeal Bar Recipe (Easy Breakfast or Snack Idea!)

Ingredients

  • 1 cup unsalted butter
  • ½ cup firmly packed brown sugar
  • 1 Coffee Cake packaged mix - Cinnamon Swirl or a Cinnamon type coffee cake mix
  • ¼ orange juice
  • 1 large egg at room temperature
  • 1 tsp pure vanilla
  • 1 ½ cups old fashioned oats
  • ½ cup chopped pistachios
  • ½ cup dried cranberries
  • Glaze:
  • 1 cup confectioner’s sugar
  • 2 tbsp. Cream

Instructions

  • In a large bowl mix the butter and brown sugar with an electric mixer until creamy and well blended. 
  • Add the coffee cake mix and the cinnamon mix (2 separate packages), the orange juice, egg and vanilla
  • Mix just until well blended
  • Stir in the pistachios and dried cranberries, just until they are mixed through.
  • Spread the batter evenly in the baking pan and bake for 30 to 35 minutes.
  • The oatmeal bars will be done when they are golden brown on top and you can insert a wooden pick in the center and it comes out clean. 
  • While the bars are cooling, mix the confectioner’s sugar and heavy cream together. 
  • For fun, you can spoon the glaze into a plastic sandwich bag, cut out a corner, and pipe it across the cooled breakfast bars. 

Notes

Glaze is totally optional. Store in an air tight container for up to a week or freeze for up to three months.
