If you’re tired of your regular grab n go muffin for breakfast, then you have to try our new mixed berry muffin recipe. For busy mornings, these delicious triple berry muffins are breakfast treats the whole family will enjoy.

The muffin tops rise beautifully, and have a slight crunch. The texture of the muffin is perfect too.

I think any time of year is great for a freshly baked batch of muffins and this easy recipe for berry muffins will remind you of the goodness of a mixed berry smoothie!

Now I love baking with frozen fruit, and usually have a bag of triple berry mix or mixed berries on hand. Our recipe for Mixed Berry Pie is just so good and so easy to make too!

But today we’re going to bake some delicious muffins – that you can enjoy with coffee, share with friends, and are great for an after school snack. Muffins freeze really well when sealed in an airtight container.

So the next time you’re looking at bakery style muffins in the grocery stores, leave them there.

Important Tip for making these amazing mixed berry muffins

The most important thing is to gently mix the wet and dry ingredients, being careful not to overstir. The batter shouldn’t be smooth like cake batter. Over-stirring makes for some very tough muffins.

  • 1 box French Vanilla Cake Mix
  • 3 eggs
  • 3/4 cups whole milk
  • ½ cup greek yoghurt
  • 1 cup butter, melted
  • 1 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1/2 cup chopped fresh strawberries
  • OR 2 cups fresh frozen mixed berries

How to make the best bakery style muffins with cake mix

In a large bowl mix the eggs (room temperature) milk, greek yoghurt, melted butter, vanilla extract. Add the mixed berries. You can use either fresh berries, or the frozen berries. I’ve set out the quantities in the recipe card below. These are your wet ingredients.

In a medium bowl sift the boxed cake mix. This is your dry ingredients.

Carefully stir the dry ingredients into the wet ingredients, just enough to blend.

Using a cookie scoop or ice cream scoop, drop the muffin batter into the muffin cups.

Place the muffin pan in the centre of a preheated oven and bake for the specified time.

Place on a wire rack to cool, and store in an airtight container.

These muffins freeze really well, I usually pop a half dozen into a zip lock bag.

Ingredients
  

  • 1 box French Vanilla Cake Mix
  • 3 eggs
  • 3/4 cups whole milk
  • ½ cup greek yoghurt
  • 1 cup butter - melted
  • 1 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1/2 cup chopped fresh strawberries
  • OR 2 cups fresh frozen mixed berries

Instructions
 

  • Preheat the oven to 375F and spray your muffin tin with Pam Baking Spray.
  • In a large bowl mix the eggs (room temperature) milk, greek yoghurt, melted butter, vanilla extract.  Add the mixed berries.  You can use either fresh berries, or the frozen berries. I’ve set out the quantities in the ingredients list above. These are your wet ingredients.
  • In a medium bowl, blend together the all purpose flour, whole wheat flour, brown sugar, cinnamon, salt, baking soda.
  • Carefully stir the dry ingredients into the wet ingredients, just enough to blend. 
  • Using a cookie scoop or ice cream scoop, drop the muffin batter into the muffin cups.
  • Place the muffin pan in the centre of a preheated oven and bake for 20 to 25 minutes.
  • Place on a wire rack to cool, and store in an airtight container.
  • These muffins freeze really well, I usually pop a half dozen into a zip lock bag.
