No preheating the oven. No hauling out the stand mixer. Just chocolate, fast.

Ingredients You’ll Need

Simple ingredients you probably already have in your pantry.

  • ½ cup Nutella – The chocolate hazelnut base that makes everything rich and smooth.
  • 2 large eggs – These give the cakes structure and that soft, almost soufflé-like texture.
  • 2 tablespoons unsweetened cocoa powder – Deepens the chocolate flavor and balances the sweetness.

For finishing (optional but gives your cakes that elegant feel):

  • Powdered sugar
  • Chopped dark chocolate

That’s it. No flour. No butter. No extra fuss.

How to Make Nutella Lava Cakes in the Air Fryer

Step 1: In a medium bowl, whisk together the Nutella, eggs, and cocoa powder until completely smooth. Take a minute here — you don’t want streaks.

Step 2: Spray two 4-inch ramekins generously with baking spray. Don’t skip this.

Step 4: Place the ramekins on the air fryer rack.

Step 5: Air fry at 350°F for about 8 minutes.

Step 6: Remove from the air fryer and let the cakes rest for 5 minutes. They’ll settle slightly — that’s normal.

Step 7: Run a knife gently around the edges and carefully invert onto serving plates.

Step 8: Dust with powdered sugar, sprinkle with chopped dark chocolate, and serve warm.

How to Know When They’re Done (This Matters)

The edges will look set and slightly puffed.

The center should still wobble a little when you gently shake the ramekin.

That wobble is what gives you the molten middle.

If you bake them until a toothpick comes out completely clean, you’ll have cake — not lava. Still delicious. Just not gooey.

Every air fryer runs a little differently, so if yours tends to run hot, start checking at 7 minutes.


A Few Tips from My Kitchen

  • Bring your eggs to room temperature if you can — it helps everything blend smoothly.
  • Don’t overmix. Just whisk until smooth.
  • If your first batch comes out more like cake than lava, then they were in the air fryer too long – just shave a minute off the bake time next time.

I tested these more than once to get that center just right. A minute really does make a difference.


Easy Ways to Change Them Up

If you want to make your cakes feel extra special:

  • Add a pinch of espresso powder to the batter.
  • Sprinkle flaky sea salt over the top before serving.
  • Serve with vanilla ice cream and let it melt into the center.
  • Swirl a spoonful of peanut butter into the batter before baking. (I’m going to try this next! )

Can I Make These in the Oven?

Yes, you can.

Bake at 400°F for 8–10 minutes in a preheated oven.
Use the same advice in the instructions below and check them early, looking for set edges and a  soft jiggly center.


Storage & Reheating

These are definitely best warm and fresh.

But if you have leftovers, store them in an airtight container for up to 2–3 days.

To reheat, microwave for about 15–20 seconds.
The center won’t be quite as molten as when they’re fresh, but they’ll still be rich and fudgy.

FAQs

Can I really bake a cake in an air fryer?

You can! Air fryers are perfect for small desserts like this because the hot air circulates quickly and evenly. 

Why isn’t my lava cake gooey?

It likely baked a little too long. I did that the first time I made them too.  I still had the molten centre, but not as much as I wanted. Reduce the cook time by a minute next time and look for that gentle jiggle in the center.

Is this Nutella lava cake flourless?

Yes — there’s no flour in this recipe, which gives it that dense, fudgy texture.

Can I double the recipe?

You can, as long as your air fryer basket isn’t overcrowded. Air needs room to circulate. The air fryer I used in the video above has space for 4 ramekins, but some air fryers are smaller. You can always make them in batches.

Ingredients
 
 

  • ½ cup nutella - Hazlenut spread

Instructions
 

  • Place nutella, eggs and cocoa powder in a medium mixing bowl and whisk until blended well.
  • Spray two – 4” ramekins
  • Divide the batter between the two ramekins
  • Using the air fryer rack, place the ramekins in the air fryer oven. Select the air fry function and bake at 350F for 8 minutes
  • Carefully remove the cakes from the air fryer and let cool for 5 minutes
  • Slowly run a knife around the outside to make sure the cakes aren’t sticking
  • Place the serving dish on the top of the cake and flip each one over.
  • Sprinkle powdered sugar and add some chopped dark chocolate and enjoy.

Notes

  • For a gooey molten center, bake just until the edges are set and the center still jiggles slightly.
  • Every air fryer runs differently — start checking at 7 minutes if yours runs hot.
  • Overbaking by even 1 minute can fully set the center.
