Preheat oven to 425F/220C
In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, lemon juice, and cornstarch.
Mix together to coat the peaches evenly, and pour everything into a 13 x 9 baking pan or dish, and bake for about 10 minutes.
While the peaches are baking, mix the dry ingredients.
Mix flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Add the butter, and blend together using a hand held pastry blender. The mixture will look like small peas, or coarse pie crust. Stir in the water just until combined, but don’t over mix.
Remove the baked peaches from the oven, and drop spoonfuls of the flour mixture over them, be sure to cover as much of the peach mixture as you can.
Sprinkle the entire peach cobbler with a mixture of ⅛ cup white sugar and ½ tsp. Cinnamon
Bake at 425F/220C 25 to 30 minutes or until the top crust is golden and the peach mixture is bubbling.
Let cool until just warm and serve with a big scoop of vanilla ice cream!
