Peach Cobbler

Ingredients

  • 8 fresh peaches - peeled and sliced See Tips for the easy way to peel peaches
  • ½ cup white sugar
  • ½ cup brown sugar
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter chilled and cut into small pieces
  • ¼ cup boiling water

Final Topping

  • 1/8 cup white sugar
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat oven to 425F/220C 
  • In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, lemon juice, and cornstarch. 
  • Mix together to coat the peaches evenly, and pour everything into a 13 x 9 baking pan or dish, and bake for about 10 minutes.
  • While the peaches are baking, mix the dry ingredients.
  • Mix flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Add the butter, and blend together using a hand held pastry blender. The mixture will look like small peas, or coarse pie crust.  Stir in the water just until combined, but don’t over mix. 
  • Remove the baked peaches from the oven, and drop spoonfuls of the flour mixture over them, be sure to cover as much of the peach mixture as you can.
  • Sprinkle the entire peach cobbler with a mixture of ⅛ cup white sugar and ½ tsp. Cinnamon
  • Bake at 425F/220C 25 to 30 minutes or until the top crust is golden and the peach mixture is bubbling. 
  • Let cool until just warm and serve with a big scoop of vanilla ice cream!
