Double Chocolate Coca Cola Cake

Ingredients

  • 1 c coca-cola not diet
  • 1/2 c cooking oil
  • 1 stick unsalted butter
  • 3 Tbsp cocoa
  • 2 c white sugar
  • 2 c all purpose flour
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 c buttermilk
  • 1 tsp baking soda
  • 1 tsp vanilla.

Frosting ingredients:

  • 1 stick butter
  • 2 1/3 Tbsp cocoa sift before using!
  • 6 Tbsp heavy cream or milk
  • 1 tsp vanilla
  • 3 3/4 c confectioners sugar make sure you sift it!

Instructions

  • In a saucepan mix cola, oil, butter and cocoa and bring to boil.This is your wet mixture 
  •  In a large bowl combine sugar, flour and salt. This is your dry mixture
  • Pour the wet (Cola) mixture over the dry (flour) mixture and beat well, using a small electric hand mixer.
  • Add eggs, buttermilk, baking soda and vanilla and beat until smooth. 
  • Pour cake batter into a greased and floured 13x9 inch baking pan.
  • Bake at 350 degrees for 25 to 35 minutes. (Oven times and temps will vary)
  • Let the cake cool on a rack while you make the frosting. 

Frosting Instructions:

  • In a saucepan, combine butter, cocoa, and milk. 
  • Heat until the butter melts. Beat in vanilla and confectioners sugar until well blended and glossy.
  • Using a spatula, spread the frosting over the cake while it is still warm.
  • Enjoy!
