Cherry Pie Cookies

There's something magical about the combination of cherries and pie, but what if you could capture that deliciousness in a cookie? Enter cherry pie cookies – the perfect fusion of two beloved desserts. These delightful treats offer the sweet, tart flavor of cherries nestled in a buttery, flaky cookie crust, making them an irresistible bite-sized indulgence.

Ingredients

  • 1 cup unsalted butter softened
  • 2 cup flour
  • ¾ cup powdered sugar
  • 1 tsp vanilla
  • 15 oz cherry pie filling
  • ½ cup white chocolate chips

Instructions

  • Preheat the oven to 325℉/180℃. Line your baking sheet(s) with parchment and set aside.

Mixing the cookie dough

  • In the bowl of a stand mixer, combine the butter, vanilla and powdered sugar. Mix until smooth.
  • Add in the flour and mix to combine, scraping the sides often.

Shaping the cookies

  • Scoop out about a tablespoon’s worth of the dough and shape into a ball. Gently indent the center to create a well.
  • Fill the well in each cookie with a heaping spoonful of the pie filling, spreading to the edges if needed.
  • Bake in the preheated oven for 12-15 minutes or until the cookie is set.
  • Allow to cool.

Decorating the cherry pie cookies

  • In a small bowl, melt the white chocolate chips in the microwave, heating for 15-30 seconds at a time and stirring until smooth.
  • Transfer the melted white chocolate to a piping bag or a small ziploc bag. Drizzle the white chocolate over the cookies. Allow to set.
