Sift the flour, baking soda and salt together. In a separate bowl, mix sugar and butter together until creamy. Mix in the egg, peanut butter and vanilla.
Gradually add the flour mixture to the wet ingredients to form a slightly stiff peanut butter cookie dough batter.
Using a small cookie scoop drop the cookie dough onto a prepared baking sheet. Press down with a fork creating a cross hatch pattern.
Sprinkle the cookies with white sugar and bake for 12-15 minutes until golden. Then allow to cool.
After sampling one or two you can store them in an airtight container. We use large Ziplock bags and keep them in the fridge.
