MERINGUE • Egg Whites • Sugar • Vanilla Extract
Whisk egg yolks in a chilled bowl. Cook sugar, cornstarch and water over medium heat, stirring constantly, until it thickens and boils. Stir half the mixture into the egg yolks.
Pour mixture back into the pot, boil and stir for 2 minutes, then remove from heat and add in butter, lemon peel, and juice. Pour into the pie crust.
Beat egg whites on high speed until foamy. Beat in sugar until stiff and glossy, then add in vanilla. Spread over filling, carefully sealing meringue to edge of crust.
Bake 8 to 12 minutes at 350F/180C or until meringue is light brown. SERVE & ENJOY!
